For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil

For the Parmesan Crust Topping:

  • ½ cup mayonnaise (or ranch dressing for extra flavor)
  • ½ cup shredded Parmesan cheese
  • ½ cup provolone or mozzarella cheese, shredded
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 tablespoon butter, melted
  • ¼ cup panko breadcrumbs

Instructions

Step 1: Season & Sear the Chicken

  1. Preheat oven to 375°F (190°C).
  2. Season chicken breasts with garlic powder, paprika, salt, and black pepper.
  3. Heat olive oil in an oven-safe skillet over medium heat.
  4. Sear the chicken for 3-4 minutes per side, until golden brown.

Step 2: Bake the Chicken

  1. Transfer skillet to the preheated oven.
  2. Bake for 15-20 minutes, or until chicken reaches 165°F (75°C) internally.

Step 3: Prepare the Parmesan Crust

  1. In a bowl, mix mayonnaise, Parmesan cheese, provolone, garlic powder, and onion powder.
  2. In a separate bowl, combine melted butter and panko breadcrumbs for the topping.

Step 4: Add the Topping & Broil

  1. Remove chicken from the oven and spread the Parmesan mixture over each breast.
  2. Sprinkle with the buttered panko breadcrumbs for extra crispiness.
  3. Place under the broiler for 2-3 minutes, until golden brown and bubbly.

Step 5: Serve & Enjoy!

  1. Let rest for 5 minutes, then serve with your favorite sides.
