- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled (or plant-based bacon bits)
- 1/2 cup sour cream or plain Greek yogurt
- 2 tablespoons chopped green onions
- Salt and pepper, to taste
- Nonstick spray
- Optional: jalapeños, diced tomatoes, avocado, ranch seasoning, vegan cheese or dairy-free sour cream
Instructions
- Preheat oven: Set oven to 425°F (220°C). Spray a 12-cup muffin tin with nonstick spray.
- Par-bake tots: Place 4 tater tots in each muffin cup. Bake for 10 minutes until softened.
- Form cups: Press the tots down and up the sides with a spoon or small glass to form nests.
- Bake again: Return to oven and bake 15–20 minutes until golden and crispy.
- Fill: Sprinkle each cup with cheese and bacon. Bake 2–3 minutes more until cheese melts.
- Top: Cool slightly, then add sour cream and green onions before serving.
