4 medium russet potatoes, diced 1 tablespoon vegetable oil 1 pound (450 g) ground beef ½ teaspoon salt ½ teaspoon black pepper ½ teaspoon smoked paprika 1 cup (100 g) shredded cheddar cheese ½ cup (120 ml) sour cream 2 green onions, sliced ¼ cup (30 g) cooked crumbled bacon (optional)


Instructions

1. Heat oil in a large skillet over medium-high heat. Add diced potatoes, season lightly, and cook for 10–12 minutes, stirring occasionally, until golden and tender. Transfer to a plate and set aside. 2. In the same skillet, cook ground beef, breaking it up with a spatula, until fully browned (6–7 minutes). Drain excess fat if needed. Season with salt, pepper, and smoked paprika. 3. Return cooked potatoes to the skillet and toss with beef. Cook another 2–3 minutes to meld flavors. 4. Sprinkle cheese over the top, cover, and let melt. 5. Serve hot, garnished with sour cream, green onions, and bacon if desired.
