For the Bars:
- 1 ½ cups all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup granulated sugar
- 2 large eggs
- ⅓ cup vegetable oil (or melted coconut oil)
- 2 tablespoons lemon juice (freshly squeezed)
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1 cup shredded zucchini (no need to peel)
For the Glaze:
- 1 cup powdered sugar
- 2 tablespoons lemon juice
- ½ teaspoon lemon zest (optional)
Instructions
- Preheat: Heat oven to 350°F (175°C). Grease or line a 9×13-inch baking pan.
- Mix dry ingredients: Whisk flour, baking powder, baking soda, and salt in a medium bowl.
- Mix wet ingredients: In a large bowl, whisk sugar, eggs, oil, lemon juice, lemon zest, and vanilla until smooth.
- Add zucchini: Fold in shredded zucchini (do not peel, and no need to drain unless very watery).
- Combine: Add dry ingredients to wet and stir gently until just combined. Do not overmix.
- Bake: Pour into prepared pan and bake 22–26 minutes, until golden and a toothpick comes out clean.
- Glaze: Cool completely. Mix powdered sugar and lemon juice for glaze, drizzle over bars, and let set before slicing.

- Don’t skip lemon zest—it’s key to the fresh flavor.
- Allow bars to cool before glazing to prevent melting.
