  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 cup panko breadcrumbs (for extra crispiness)

For the Lemon Pepper Sauce:

  • 3 tablespoons vegan butter, melted
  • 1 teaspoon olive oil
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 teaspoon lemon zest
  • 1 teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon salt

For Garnish (Optional):

  • Fresh parsley, chopped
  • Lemon wedges for serving

Instructions

Step 1: Preheat & Prepare the Baking Sheet

  1. Preheat oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper and set aside.

Step 2: Make the Batter

  1. In a bowl, whisk together flour, plant-based milk, garlic powder, onion powder, paprika, black pepper, and salt until smooth.
  2. Place panko breadcrumbs in a separate bowl.

Step 3: Coat the Cauliflower

  1. Dip each cauliflower floret into the batter, coating evenly.
  2. Roll in panko breadcrumbs for extra crunch.
  3. Place on the prepared baking sheet.

Step 4: Bake the Cauliflower

  1. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
  2. (Air-Fryer Option: Cook at 375°F (190°C) for 15 minutes, shaking halfway.)

Step 5: Make the Lemon Pepper Sauce

  1. In a small bowl, mix melted vegan butter, olive oil, lemon juice, lemon zest, black pepper, garlic powder, and salt.
  2. Whisk until well combined.

Step 6: Toss & Serve

  1. Remove the cauliflower from the oven.
  2. Toss in the lemon pepper sauce until evenly coated.
  3. Garnish with fresh parsley and serve with lemon wedges.
