For the Meringue Topping:
- 3 large egg whites, at room temperature
- 1/4 teaspoon cream of tartar
- 1/2 cup granulated sugar
- 1/2 teaspoon vanilla extract
Instructions
- Prepare pan: Spray a 9×13-inch baking dish with nonstick spray or line with parchment paper.
- Melt marshmallows: In a large saucepan, melt butter over low heat. Add marshmallows and stir until smooth. Mix in lemon Jell-O powder and lemon extract.
- Add cereal: Remove from heat and fold in Rice Krispies until fully coated.
- Press into pan: Transfer mixture to the prepared dish and press gently into an even layer. Let cool.
- Make meringue: In a clean, grease-free bowl, whip egg whites and cream of tartar until soft peaks form. Gradually add sugar and beat until glossy stiff peaks appear. Mix in vanilla.
- Top & toast: Spread meringue over cooled lemon Rice Krispie layer. Torch the top or broil for 1–2 minutes until lightly toasted.
- Cool & cut: Allow to cool fully before slicing into squares.
