Instructions

  1. Prepare pan: Spray a 9×13-inch baking dish with nonstick spray or line with parchment paper.
  2. Melt marshmallows: In a large saucepan, melt butter over low heat. Add marshmallows and stir until smooth. Mix in lemon Jell-O powder and lemon extract.
  3. Add cereal: Remove from heat and fold in Rice Krispies until fully coated.
  4. Press into pan: Transfer mixture to the prepared dish and press gently into an even layer. Let cool.
  5. Make meringue: In a clean, grease-free bowl, whip egg whites and cream of tartar until soft peaks form. Gradually add sugar and beat until glossy stiff peaks appear. Mix in vanilla.
  6. Top & toast: Spread meringue over cooled lemon Rice Krispie layer. Torch the top or broil for 1–2 minutes until lightly toasted.
  7. Cool & cut: Allow to cool fully before slicing into squares.
