- For the Couscous:
- 1 cup couscous
- 1 ¼ cups hot vegetable or chicken broth
- 1 tbsp olive oil
- ¼ cup chopped fresh parsley or mint
- Optional: chopped cucumbers, cherry tomatoes, olives, red onion
Instructions
- Marinate the Chicken: Mix lemon juice, zest, garlic, olive oil, oregano, thyme, salt, and pepper. Coat chicken well and marinate for at least 30 minutes or overnight.
- Cook the Chicken: Grill or cook in a skillet over medium heat for 6–7 minutes per side, until cooked through and golden.
- Prepare the Couscous: Add couscous to a heatproof bowl. Pour hot broth over it, cover, and let sit for 5 minutes. Fluff with a fork and stir in olive oil and herbs. Add optional veggies if desired.
- Assemble: Slice the grilled chicken and serve over a bed of couscous. Garnish with lemon wedges and extra herbs.
