  • 3 garlic cloves, minced
  • 1 teaspoon Dijon mustard
  • Salt and black pepper, to taste
  • Lemon slices (for garnish)
  • Fresh thyme sprigs (optional, for serving)

Instructions

1. Prepare the marinade
In a medium bowl, whisk together olive oil, lemon juice, lemon zest, thyme, rosemary, garlic, Dijon mustard, salt, and pepper until well combined.

2. Marinate the chicken
Place chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, seal or cover, and refrigerate for at least 30 minutes (or up to 8 hours for deeper flavor).

3. Preheat the oven
Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.

4. Bake the chicken
Transfer the marinated chicken to the baking dish. Discard excess marinade. Bake uncovered for 22–28 minutes or until the chicken reaches an internal temperature of 165°F (74°C).

5. Rest and serve
Let the chicken rest for 5 minutes before slicing. Garnish with lemon slices and fresh thyme, then serve warm.

Optional: Pan-sear the chicken on medium-high heat for 2 minutes per side before baking for extra color and flavor.
