  • 1 ½ cups shredded mozzarella cheese (170g)
  • 2 tablespoons cream cheese (30g)
  • ¾ cup almond flour (75g)
  • 1 egg
  • ½ pound shaved steak or thinly sliced sirloin (225g)
  • ½ green bell pepper, thinly sliced
  • ½ small onion, thinly sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 3 slices provolone or mozzarella cheese

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Heat olive oil in a skillet over medium heat. Sauté sliced onion and bell pepper for 5–7 minutes until soft. Add shaved steak, season with salt and pepper, and cook for 3–4 minutes. Set aside to cool slightly.
  3. In a microwave-safe bowl, melt mozzarella and cream cheese in 30-second intervals, stirring between each. Once melted, mix in almond flour and egg to form a dough. Chill if too sticky.
  4. Divide dough into 3–4 portions and flatten each into a rectangle on parchment paper. Spoon steak mixture into the center, top with cheese, fold, and seal edges.
  5. Transfer rolls to baking sheet and bake for 18–20 minutes until golden brown.
