  • ¼ tsp salt

  • 16 oz (450g) cream cheese, softened
  • 2 large eggs
  • ½ cup (120g) sour cream
  • ½ cup (100g) low carb sweetener
  • 1 tsp vanilla extract
  • Optional: sugar-free chocolate chips or crushed keto sandwich cookies

Instructions

  1. Prepare crust: Mix almond flour, cocoa powder, melted butter, sweetener, vanilla, and salt until crumbly. Press two-thirds into a parchment-lined 8×8 or 9×9 pan. Reserve the rest for topping.
  2. Make filling: Beat softened cream cheese with sweetener until smooth. Add eggs one at a time, mixing gently. Stir in sour cream and vanilla until combined.
  3. Assemble: Spread cheesecake filling over the crust. Sprinkle reserved chocolate mixture on top.
  4. Bake: Bake at 325°F (160°C) for 35–40 minutes, until edges are set and the center slightly jiggles.
  5. Chill: Cool at room temperature, then refrigerate at least 3 hours or overnight before slicing into bars.
