 - ½ cup (115g) melted butter
 - ½ cup (100g) low carb sweetener (erythritol, monk fruit, or blend)
 - 1 tsp vanilla extract
 - ¼ tsp salt
 
For the Cheesecake Filling:
- 16 oz (450g) cream cheese, softened
 - 2 large eggs
 - ½ cup (120g) sour cream
 - ½ cup (100g) low carb sweetener
 - 1 tsp vanilla extract
 - Optional: sugar-free chocolate chips or crushed keto sandwich cookies
 
Instructions
- Prepare crust: Mix almond flour, cocoa powder, melted butter, sweetener, vanilla, and salt until crumbly. Press two-thirds into a parchment-lined 8×8 or 9×9 pan. Reserve the rest for topping.
 - Make filling: Beat softened cream cheese with sweetener until smooth. Add eggs one at a time, mixing gently. Stir in sour cream and vanilla until combined.
 - Assemble: Spread cheesecake filling over the crust. Sprinkle reserved chocolate mixture on top.
 - Bake: Bake at 325°F (160°C) for 35–40 minutes, until edges are set and the center slightly jiggles.
 - Chill: Cool at room temperature, then refrigerate at least 3 hours or overnight before slicing into bars.
