  • Author: Lyndy
  • Total Time: 1 hour
  • Yield: 810 slices 1x

Description

This Japanese Matcha Pound Cake blends the earthy, aromatic flavor of premium matcha green tea powder with the buttery richness of a classic pound cake. Lightly sweet, moist, and beautifully green, this loaf is perfect for tea time, brunch, or an elegant dessert spread. A true balance of refinement and comfort, every slice celebrates subtle sweetness and Japanese-inspired simplicity.

Ingredients

Scale
  • 1 cup (130 g) all-purpose flour
  • 1 tablespoon matcha powder (preferably ceremonial grade)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (115 g) unsalted butter, softened
  • 3/4 cup (150 g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/3 cup (80 ml) milk or plant-based milk
  • Optional Add-Ins: White chocolate chips, chopped nuts, or 1 teaspoon honey for added flavor

Instructions

  1. Preheat oven: Set to 350°F (175°C). Grease and line an 8×4-inch loaf pan with parchment paper.
  2. Mix dry ingredients: Whisk together flour, matcha powder, baking powder, and salt. Sift for a smooth texture.
  3. Cream butter and sugar: Beat butter and sugar together until light and fluffy, about 2–3 minutes.
  4. Add eggs and vanilla: Beat in eggs one at a time, then stir in vanilla extract.
  5. Combine wet and dry: Alternate adding dry ingredients and milk, mixing just until smooth. Avoid overmixing.
  6. Bake: Pour batter into loaf pan and smooth the top. Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool and serve: Let cool in the pan for 10 minutes, then transfer to a rack to cool completely before slicing.

Notes

  • Use high-quality matcha for vibrant green color and clean flavor.
  • Do not overbake — it will dull the color and dry the loaf.
  • Ensure butter and eggs are at room temperature for even mixing.
  • Sift matcha and flour to prevent clumps.
  • Wrap cooled loaf tightly to maintain moisture for up to 3 days.
