- 8 flour tortillas (8-inch size works best)
- 2 cups shredded cheddar cheese (or a blend of orange and white cheeses)
- 1 tbsp butter or cooking spray
- Optional fillings: cooked chicken, black beans, sautéed peppers, or diced tomatoes
- Optional garnish: sour cream, salsa, or guacamole for dipping

Instructions
- Prepare tortillas: Lay out 4 tortillas. Using a small sharp knife, cut out Jack O’Lantern eyes, nose, and mouth on each one.
- Assemble filling: Place the remaining 4 tortillas flat. Sprinkle ½ cup cheese (and optional fillings) evenly on each.
- Top and seal: Place the cut-out tortilla on top of the cheese-covered one to form a sandwich.
- Cook: Heat a skillet over medium heat. Melt butter or spray lightly with cooking spray. Place quesadillas in the skillet, cooking for 2–3 minutes per side until golden and cheese is melted.
- Serve: Transfer to a plate and serve warm with salsa, sour cream, or guacamole.
