  • 1 tbsp olive oil
  • 1 lb Italian sausage links (or ground Italian sausage)
  • 1 ½ lbs Yukon Gold potatoes, cut into ½-inch pieces
  • 1 yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp crushed red pepper flakes (optional)
  • 1 tsp Italian seasoning
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prep the ingredients: Cut potatoes into ½-inch pieces. Slice onion, mince garlic, and chop parsley. If using sausage links, slice into thick rounds.
  2. Brown the sausage: Heat olive oil in a large skillet over medium heat. Add sausage and cook 6–8 minutes until browned. Remove and set aside.
  3. Cook the potatoes: Add more oil if needed, then add potatoes. Season with salt and pepper. Cook 10–12 minutes, stirring occasionally, until golden and tender.
  4. Add onions and garlic: Add sliced onions. Sauté 5–6 minutes until softened and caramelized. Add garlic, Italian seasoning, and red pepper flakes.
  5. Combine and finish: Return sausage to the skillet. Stir everything together and cook 3–4 minutes to heat through. Taste and adjust seasoning.
  6. Serve: Garnish with fresh parsley and serve warm.
