  • 4 salmon fillets (skinless, 6 oz each)
  • 4 tablespoons butter, melted
  • 4 garlic cloves, minced
  • 1 lemon, thinly sliced
  • 1 medium zucchini, sliced
  • 1 medium yellow squash, sliced
  • ½ red onion, sliced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Optional: red pepper flakes for heat

Instructions

  1. Preheat the oven to 400°F (or heat your grill to medium-high).
  2. Cut 4 large sheets of heavy-duty foil, enough to wrap each fillet and veggies completely.
  3. Divide the vegetables evenly among the center of each foil piece. Drizzle with a little olive oil, then season with salt and pepper.
  4. Place one salmon fillet on top of the veggies in each packet.
  5. Combine the melted butter and minced garlic, then drizzle evenly over each piece of salmon.
  6. Top with 2–3 thin lemon slices per salmon fillet and a sprinkle of fresh parsley.
  7. Wrap each foil packet tightly, sealing the edges securely to lock in moisture.
  8. Bake or grill the foil packs for 18–20 minutes, until the salmon is flaky and opaque.
  9. Carefully open the foil packs (watch for steam!) and serve immediately, garnished with extra parsley if desired.

Notes

Use fresh herbs rather than dried for a burst of brightness
Brush foil lightly with oil before adding veggies to prevent sticking
