- 4 salmon fillets (skinless, 6 oz each)
- 4 tablespoons butter, melted
- 4 garlic cloves, minced
- 1 lemon, thinly sliced
- 1 medium zucchini, sliced
- 1 medium yellow squash, sliced
- ½ red onion, sliced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Optional: red pepper flakes for heat
Instructions
- Preheat the oven to 400°F (or heat your grill to medium-high).
- Cut 4 large sheets of heavy-duty foil, enough to wrap each fillet and veggies completely.
- Divide the vegetables evenly among the center of each foil piece. Drizzle with a little olive oil, then season with salt and pepper.
- Place one salmon fillet on top of the veggies in each packet.
- Combine the melted butter and minced garlic, then drizzle evenly over each piece of salmon.
- Top with 2–3 thin lemon slices per salmon fillet and a sprinkle of fresh parsley.
- Wrap each foil packet tightly, sealing the edges securely to lock in moisture.
- Bake or grill the foil packs for 18–20 minutes, until the salmon is flaky and opaque.
- Carefully open the foil packs (watch for steam!) and serve immediately, garnished with extra parsley if desired.
