Description
Looking for a healthy, flavor-packed, and easy-to-make sandwich recipe that works for lunch, dinner, or even meal prep? This Chicken Avocado Melt Sandwich is your new go-to.
Ingredients
Scale
- 2 ciabatta sandwich rolls
- 2 grilled chicken breasts (about 1 lb total, sliced thin)
- 1 ripe avocado, mashed or sliced
- 4 slices of gouda cheese (or any preferred melting cheese)
- ¼ cup chipotle aioli (store-bought or homemade)
- ½ cup baby spinach
- 1 tbsp olive oil (for grilling)
- Salt and pepper, to taste
Instructions
- Grill the chicken: Season both sides of your chicken breasts with salt and pepper. Heat a skillet over medium-high heat, add olive oil, and cook the chicken for 4–5 minutes per side or until the internal temp hits 165°F. Remove and let rest before slicing thinly.
- Toast the ciabatta rolls: Slice each roll in half and lightly toast the inside face in a hot skillet until golden brown. This keeps the sandwich from getting soggy.
- Assemble the sandwich: Spread chipotle aioli on both sides of each roll. Layer in the sliced grilled chicken, mashed avocado, baby spinach, and top with cheese.
- Grill the sandwich: Place the full sandwich back in the skillet or panini press. Grill until the cheese is melted and the outside is crispy — about 3–4 minutes per side if using a pan.
- Slice and serve: Slice the sandwich diagonally for that café-style look. Serve warm with a fresh salad or baked sweet potato fries.
Notes
- Marinate the chicken: Even 30 minutes in lemon juice, garlic, and olive oil boosts flavor.
- Use a press: A panini press gets the melt just right and creates those delicious grill lines.
- Avoid soggy bread: Toasting the rolls first keeps them crispy even after adding avocado.
