Ingredients
- 2 boneless skinless chicken breasts, cut into chunks
- 2 cups fresh pineapple chunks
- 1 red bell pepper, chopped into 1-inch squares
- 1 green bell pepper, chopped into 1-inch squares
- 1 red onion, cut into chunks
- 1/2 cup teriyaki sauce (store-bought or homemade)
- Salt and pepper, to taste
- Olive oil spray or drizzle (optional)
- Skewers (metal or soaked wooden)
Instructions
1. Preheat the grill
Heat your grill to medium-high (about 375–400°F). Lightly oil the grates or spray them to prevent sticking.
2. Prepare your skewers
If using wooden skewers, soak them in water for at least 30 minutes to avoid burning.
3. Assemble the kabobs
Thread the chicken, pineapple, bell peppers, and onion alternately onto skewers. Leave a bit of space between each piece for even cooking.
4. Season and glaze
Lightly season the kabobs with salt and pepper. Brush or drizzle with half of the teriyaki sauce.
5. Grill the kabobs
Place the kabobs on the grill and cook for 10–12 minutes, turning occasionally and brushing with more teriyaki sauce. Cook until the chicken reaches an internal temperature of 165°F.
6. Serve and enjoy
Remove kabobs from the grill and let them rest for 5 minutes. Serve warm with extra teriyaki sauce if desired.
