Description
When you’re searching for the perfect crowd-pleasing appetizer that’s quick to make, visually appealing, and bursts with sweet tropical flavor, look no further than Coconut Pineapple Bites.
Ingredients
- 1 can (20 oz) pineapple chunks in juice, drained and patted dry
- 1 cup shredded sweetened coconut (or unsweetened if preferred)
- 2 tablespoons honey or maple syrup (optional for coating)
- ½ teaspoon vanilla extract (optional for added flavor)
- Toothpicks or small party skewers
Optional additions:
- ½ cup vanilla Greek yogurt or whipped cream cheese (for dipping or layering)
- ¼ cup crushed nuts (almonds or macadamias)
- Fresh mint leaves for garnish
- Other fruit like strawberries or kiwi for variation
Instructions
Step 1: Prep the pineapple
Drain the pineapple chunks thoroughly. Pat them dry with paper towels to remove excess moisture so the coconut sticks better.
Step 2: Add optional sweet coating
If desired, place pineapple chunks in a bowl and toss with honey and vanilla extract for extra sweetness and flavor.
Step 3: Coat with coconut
Spread the shredded coconut in a shallow dish. Roll or press each pineapple chunk into the coconut until coated evenly on all sides. Use tongs or fingers to help press it in.
Step 4: Assemble the bites
Insert a toothpick or skewer into each coated pineapple chunk. Optionally, alternate with small mint leaves, berries, or cheese cubes for added texture and color.
Step 5: Chill and serve
Refrigerate for 15–30 minutes before serving to help them firm up and enhance flavor.
Notes
- Use sweetened coconut for a dessert-style bite, or unsweetened for a lighter version.
- Add a drizzle of honey just before serving for a glossy, sweet finish.
- Layer on a mini skewer with complementary flavors like strawberries or bananas.
