Description

If you’re in search of a unique cookie that’s light, crisp around the edges, and melts in your mouth, then these Easy Oatmeal Lace Cookies will become your new baking obsession.

Ingredients

Scale

  • ½ cup unsalted butter (1 stick), melted
  • ⅔ cup light brown sugar, packed
  • 1 tablespoon milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract
  • ½ cup old-fashioned rolled oats
  • 2 tablespoons all-purpose flour
  • ¼ teaspoon salt

Optional:

  • ½ cup melted chocolate chips for drizzling or sandwiching
  • ¼ teaspoon ground cinnamon for a holiday twist

Instructions

Step 1: Preheat your oven
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

Step 2: Mix wet ingredients
In a medium bowl, combine the melted butter, brown sugar, milk, and vanilla extract. Whisk until smooth.

Step 3: Add dry ingredients
Stir in the oats, flour, salt, and optional cinnamon. Mix until fully combined. The batter will be loose—this is what helps create the lacy effect.

Step 4: Scoop the dough
Using a teaspoon or small cookie scoop, drop the dough onto the prepared baking sheets. Leave at least 3 inches of space between each cookie—they spread a lot!

Step 5: Bake the cookies
Bake for 6–8 minutes, or until the cookies are bubbling and golden brown around the edges. Watch closely—they go from perfect to overdone quickly.

Step 6: Cool before removing
Let the cookies cool on the baking sheet for 5–7 minutes to set, then transfer carefully to a cooling rack. They will firm up as they cool.

Step 7: Optional – Add chocolate
Drizzle with melted chocolate or sandwich two cookies with chocolate in the middle for an extra special treat.

Notes

  • Use parchment or silicone mats to prevent sticking.
  • Space cookies far apart—they spread to 3x their original size.
  • Don’t overbake—golden brown edges are good, but dark brown means bitter.
