  • 8 oz (225g) ramen noodles (or lo mein noodles)
  • 1 lb (450g) flank steak, thinly sliced against the grain
  • 2 tbsp vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 small onion, sliced
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced

For the Sauce:

  • 1/3 cup hoisin sauce
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 1 tsp chili garlic sauce (optional, for heat)
  • 1/4 cup water

Instructions

  1. Prepare the noodles: Cook the ramen noodles according to package instructions. Drain and set aside.
  2. Mix the sauce: In a small bowl, whisk together hoisin sauce, soy sauce, oyster sauce, sesame oil, chili garlic sauce (if using), and water. Set aside.
  3. Cook the beef: Heat 1 tablespoon of oil in a large skillet or wok over high heat. Add the sliced beef and cook for 2–3 minutes until browned but not fully cooked through. Remove from pan and set aside.
  4. Sauté the vegetables: In the same pan, add the remaining oil. Toss in garlic, ginger, onions, and bell peppers. Stir-fry for 3–4 minutes until just tender.
  5. Combine everything: Return the beef to the pan along with the green onions. Pour in the sauce and bring everything to a simmer. Cook for another 2–3 minutes until the sauce thickens slightly and the beef is cooked through.
  6. Add noodles: Toss in the cooked noodles and mix until everything is evenly coated with sauce.
  7. Serve hot: Garnish with extra green onions or sesame seeds if desired.

Notes

Slice beef thinly and against the grain for the most tender texture. Stir-fry over high heat to quickly sear the meat and lock in flavor. Don’t overcook the noodles—slightly undercooked noodles will absorb the sauce better and finish cooking in the pan. Adjust the sauce ingredients to your taste: more hoisin for sweetness, more chili garlic for heat, or extra soy for depth.
