Ingredients
- ½ cup plain Greek yogurt (non-fat or 2% work best)
- 2 tablespoons almond flour (or oat flour)
- 1 tablespoon peanut butter (or almond butter)
- 1 tablespoon maple syrup or honey
- 1 teaspoon vanilla extract
- Pinch of salt
- 2 tablespoons mini chocolate chips (dairy-free or dark if preferred)
Optional Add-Ins:
- 1 scoop vanilla protein powder (for vanilla protein cookie dough)
- 1 tablespoon crushed nuts or seeds
- 1 tablespoon cocoa powder for a chocolate version
- Dash of cinnamon for warmth
Instructions
Step 1: Combine wet ingredients
In a bowl, stir together the Greek yogurt, peanut butter, maple syrup, and vanilla extract until smooth and creamy.
Step 2: Add dry ingredients
Add the almond flour and a pinch of salt. Mix well until a dough-like consistency forms. If the mixture is too thin, add a bit more almond flour.
Step 3: Fold in chocolate chips
Stir in the mini chocolate chips or any other mix-ins you like.
Step 4: Taste and adjust
Taste and adjust sweetness or salt as needed. You can also add a splash more vanilla or a dash of cinnamon for extra depth.
Step 5: Serve or chill
Enjoy immediately or chill in the fridge for 10–15 minutes to firm up the texture.
