Ingredients
- 2 pounds Yukon gold or russet potatoes, peeled and cut into bite-sized chunks
- 1 packet (1 oz) dry French onion soup mix
- ½ cup melted unsalted butter
- 1 tablespoon olive oil
- 1 small yellow onion, thinly sliced (optional but recommended)
- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
- ½ teaspoon garlic powder
- Salt and pepper, to taste
- Optional: ½ cup shredded gruyère or Swiss cheese (for a cheesy variation)
- Optional garnish: chopped parsley or extra thyme
Instructions
Step 1: Preheat the oven
Set your oven to 400°F (200°C) and lightly grease your baking dish or line with parchment.
Step 2: Prep the potatoes
Peel and chop the potatoes into evenly sized pieces for uniform cooking. Place in a large bowl.
Step 3: Mix the flavor base
In a small bowl, combine the melted butter, olive oil, dry soup mix, garlic powder, thyme, and a pinch of salt and pepper. Stir to combine.
Step 4: Coat the potatoes
Pour the flavor mixture over the potatoes. Toss until everything is evenly coated. Add sliced onion if using.
Step 5: Bake uncovered
Transfer to your baking dish and spread out in an even layer. Bake for 45–50 minutes, stirring halfway through to prevent sticking and ensure even browning.
Step 6: Optional cheesy finish
In the last 10 minutes, sprinkle cheese on top if desired and return to the oven until melted and bubbly.
Step 7: Garnish and serve
Remove from oven, sprinkle with fresh parsley or thyme, and serve hot.

- Stir halfway through baking to ensure browning on all sides.
