Irresistible Cheesy Ranch Potatoes and Smoked Sausage

  • 2 lbs russet potatoes, peeled and diced
  • 1 lb smoked sausage, sliced into rounds
  • 2 cups shredded cheddar cheese, divided
  • 1 (10.75 oz) can condensed cream of chicken soup
  • 1 cup sour cream
  • 1 oz packet dry ranch seasoning mix
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • Salt and black pepper, to taste
  • 2 tbsp chopped fresh chives (optional for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C). Prepare your oven so it’s ready when your casserole is assembled.
  2. Prepare the potatoes. Peel and dice your potatoes into ½-inch cubes for even cooking. Place them in a large mixing bowl.
  3. Add sausage and mix-ins. Slice the smoked sausage into rounds and add them to the bowl with the potatoes. Pour in the melted butter and toss until everything is evenly coated.
  4. Mix the sauce. In a separate bowl, stir together the sour cream, cream of chicken soup, ranch seasoning, milk, and 1½ cups of shredded cheddar cheese. Mix until smooth.
  5. Combine and season. Pour the sauce over the potatoes and sausage. Stir to coat everything well. Season with a pinch of salt and black pepper to taste.
  6. Transfer to a baking dish. Spread the mixture evenly into a greased 9×13-inch casserole dish.
  7. Bake until golden and bubbly. Cover with foil and bake for 40 minutes. Remove the foil, sprinkle the remaining ½ cup of cheese on top, and bake uncovered for an additional 15–20 minutes or until the top is golden brown and bubbly.
  8. Garnish and serve. Let cool slightly before serving. Garnish with chopped chives if desired.

  • Cut your potatoes evenly to ensure consistent cooking and prevent undercooked bites.
  • Use smoked sausage for depth of flavor; turkey or chicken sausage works great too.
  • Don’t skip the foil cover during the first bake — it helps the potatoes cook through without drying out the top.
