  • 1½ cups (150g) shredded cheddar cheese (or a cheese blend)
  • Optional: ½ teaspoon black pepper or paprika for extra flavor

Instructions

Step 1: Preheat and Prep

Preheat your oven to 450°F (232°C). Place the butter in your baking dish and put it in the oven to melt while the oven preheats. Keep an eye on it—you want melted, not browned.

Step 2: Cook the Sausage

While the butter is melting, cook the sausage in a skillet over medium heat. Break it into crumbles and cook until fully browned and no longer pink. Drain excess grease and set aside to cool slightly.

Step 3: Make the Dough

In a large bowl, whisk together the flour, baking powder, sugar, and salt. Pour in the buttermilk and stir until just combined—don’t overmix.

Gently fold in the cooked sausage and shredded cheese. The dough will be thick and slightly sticky.

Step 4: Assemble and Bake

Remove the baking dish with the melted butter from the oven. Carefully spoon or spread the dough evenly into the hot butter. Use a spatula to press it to the edges, then use a knife to lightly score the top into 9 squares. This makes it easier to cut after baking.

Bake for 20–25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Step 5: Serve Warm

Let the biscuits cool for 5–10 minutes before slicing and serving. They’re best enjoyed warm, but still delicious at room temperature.
