For the Vanilla Cream:
- 1 cup heavy whipping cream
- 1 teaspoon pure vanilla extract
- 8 ounces mascarpone cheese or cream cheese, softened
- ⅓ cup granulated sugar
- 1 cup vanilla pudding (homemade or high-quality store-bought)
For the Trifle Layers:
- 1 pound cake or angel food cake, cut into cubes (homemade or store-bought)
- 1 ½ cups strawberries, hulled and sliced
- 1 cup blueberries
- 1 cup raspberries
- 1 tablespoon sugar (for macerating berries, optional)
- Fresh mint, for garnish (optional)
Instructions
- Make the vanilla cream: In a large bowl, beat the heavy cream and vanilla extract until soft peaks form. In another bowl, beat the mascarpone and sugar until smooth. Fold in the whipped cream, then stir in the vanilla pudding. Chill until ready to use.
- Prepare the berries: Wash, dry, and slice the strawberries. Combine with blueberries and raspberries. Sprinkle with sugar if desired and let sit for 10 minutes to macerate (draw out juices).
- Cut the cake: Slice your pound cake into bite-sized cubes. If using frozen cake, let it thaw first for easy cutting.
- Layer the trifle: In a large trifle dish or glass bowl, layer ⅓ of the cake cubes at the bottom. Add a layer of cream, followed by a layer of berries. Repeat two more times, finishing with a dollop of cream and a generous handful of berries on top.
- Chill: Cover and refrigerate for at least 2 hours before serving to allow the flavors to meld.
- Garnish and serve: Top with fresh mint or extra whipped cream just before serving.
