2 pounds potatoes (about 4 large russet or Yukon Gold), peeled and quartered 1 cup whole milk 1/2 cup finely chopped scallions (green onions) 1/4 cup unsalted butter, plus extra for serving Salt to taste Ground black pepper to taste


Instructions

Boil the Potatoes Place peeled and quartered potatoes into a large pot with salted cold water. Bring to a boil, then reduce heat and simmer for 15–20 minutes until fork-tender. Warm the Milk and Scallions While the potatoes cook, gently warm the milk and scallions in a small saucepan over low heat until softened. Do not boil. Mash the Potatoes Drain cooked potatoes well and return to the pot. Mash until smooth and fluffy. Combine and Season Pour in the warm milk and scallions, add butter, salt, and pepper. Stir until fully incorporated and creamy. Serve Hot Transfer the champ to a bowl, top with an extra pat of butter, and serve warm.

Notes

Use Russet or Yukon Gold potatoes for the best mash. Gently heat the milk—never boil it. Mash potatoes while hot for a fluffier texture. Add warm milk gradually until desired consistency is reached. Irish butter adds rich flavor if available. To reheat, use a saucepan with a splash of milk or microwave in intervals. Leftovers can be turned into potato cakes or casseroles.
