- 1 (8 oz) can tomato sauce
- 2 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp dried oregano
- 1/2 tsp sea salt, more to taste
- 1/4 tsp black pepper
- 1 cup low-sodium beef broth
- Optional toppings: diced avocado, shredded cheddar or dairy-free cheese, green onions, sour cream or coconut cream, jalapeños
Instructions
- Sauté aromatics: Set Instant Pot to “Sauté.” Add oil, onion, and bell peppers. Cook 3–4 minutes until softened. Stir in garlic and cook 30 seconds.
- Brown beef: Add ground beef. Cook 5–6 minutes until no longer pink. Drain excess grease if needed.
- Season: Stir in chili powder, cumin, paprika, oregano, salt, black pepper, and tomato paste. Cook 1 minute to bloom flavors.
- Add liquids: Stir in diced tomatoes, tomato sauce, and beef broth. Deglaze bottom of pot.
- Pressure cook: Seal lid, set valve to sealing. Cook on HIGH for 10 minutes. Natural release 10 minutes, then quick release.
- Serve: Stir, adjust seasoning, and ladle into bowls. Garnish with avocado, cheese, sour cream, or jalapeños.
