  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 1/2 lbs ground beef (80/20 preferred)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 tbsp tomato paste
  • 1 (15 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp sea salt, more to taste
  • 1/4 tsp black pepper
  • 1 cup low-sodium beef broth
  • Optional toppings: diced avocado, shredded cheddar or dairy-free cheese, green onions, sour cream or coconut cream, jalapeños

Instructions

  1. Sauté aromatics: Set Instant Pot to “Sauté.” Add oil, onion, and bell peppers. Cook 3–4 minutes until softened. Stir in garlic and cook 30 seconds.
  2. Brown beef: Add ground beef. Cook 5–6 minutes until no longer pink. Drain excess grease if needed.
  3. Season: Stir in chili powder, cumin, paprika, oregano, salt, black pepper, and tomato paste. Cook 1 minute to bloom flavors.
  4. Add liquids: Stir in diced tomatoes, tomato sauce, and beef broth. Deglaze bottom of pot.
  5. Pressure cook: Seal lid, set valve to sealing. Cook on HIGH for 10 minutes. Natural release 10 minutes, then quick release.
  6. Serve: Stir, adjust seasoning, and ladle into bowls. Garnish with avocado, cheese, sour cream, or jalapeños.

Notes

  • For a thicker chili, stir in 1/2 cup pumpkin puree before pressure cooking.
  • Use 80/20 beef for flavor; leaner beef may need extra oil.
