Description
If you’re craving the deep, savory flavors of French onion soup in a form hearty enough to be dinner, look no further than this French Onion Beef and Pasta Casserole.
Ingredients
- 12 oz pasta (penne or rigatoni work best)
 - 1 tablespoon olive oil
 - 1 lb ground beef
 - 1 medium yellow onion, thinly sliced
 - 1/2 teaspoon salt
 - 1/4 teaspoon black pepper
 - 1 teaspoon garlic powder
 - 1 tablespoon Worcestershire sauce
 - 1/2 cup beef broth
 - 1 can (10.5 oz) condensed French onion soup
 - 1 cup sour cream
 - 2 cups shredded Swiss cheese
 - Optional: chopped parsley for garnish

Instructions
Bring a large pot of salted water to a boil. Cook pasta until just al dente (about 1–2 minutes less than package instructions). Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add sliced onions and sauté for 10 minutes until softened and golden. Add ground beef, breaking it up with a spoon. Season with salt, pepper, and garlic powder. Cook until browned.
Stir in Worcestershire sauce, beef broth, and French onion soup. Let it simmer for 5 minutes, then remove from heat. Stir in sour cream until well combined.
In a large mixing bowl or baking dish, combine the cooked pasta with the beef-onion mixture. Stir in 1 cup of shredded cheese.
Transfer the mixture to a greased 9×13-inch casserole dish. Sprinkle the remaining 1 cup of Swiss cheese on top.
Bake in a preheated oven at 375°F (190°C) for 20–25 minutes, or until bubbly and golden on top.
Let the casserole sit for 5 minutes before serving. Garnish with parsley if desired.
Notes
- Add mushrooms for extra umami
 - Use Gruyère instead of Swiss for a richer melt
 - Swap in ground turkey for a lighter version
 - Top with crispy onions before baking for a crunch
