  • ¾ cup (150g) granulated sugar
  • 3 large eggs
  • ½ cup (120g) sour cream
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • For the Baklava Layers:
  • 1 cup (150g) shelled pistachios, finely chopped
  • ½ cup (50g) walnuts, finely chopped
  • 1 teaspoon cinnamon
  • ½ teaspoon ground cardamom (optional)
  • 1620 sheets phyllo dough, thawed if frozen
  • ½ cup (113g) unsalted butter, melted
  • For the Honey Syrup:
  • ½ cup (120ml) honey
  • ¼ cup (60ml) water
  • ¼ cup (50g) sugar
  • 1 teaspoon lemon juice
  • 1 cinnamon stick

Instructions

  1. Preheat oven to 325°F (163°C). Grease and line a 9-inch springform pan with parchment.
  2. Mix pistachios, walnuts, cinnamon, and cardamom in a bowl. Set aside.
  3. Brush a phyllo sheet with melted butter and layer in the pan, letting edges overhang. Repeat with 8–10 sheets, layering nuts every 3 layers.
  4. Beat cream cheese and sugar until smooth. Add eggs one at a time, then sour cream, vanilla, and salt. Pour over the phyllo layers.
  5. Top with 8–10 more buttered phyllo sheets, folding edges. Lightly score top.
  6. Bake for 60–70 minutes until center is set. Cool completely, then chill 4 hours or overnight.
  7. Simmer honey, water, sugar, lemon juice, and cinnamon stick for 5–7 minutes. Let cool.
  8. Once cheesecake is chilled, drizzle syrup on top and garnish with extra chopped pistachios.
