Instructions

  2. Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Cook chicken for 5–6 minutes per side or until golden brown and fully cooked (internal temperature 165°F / 75°C). Brush with reserved marinade during the last minute for extra glaze.
  3. Make the Avocado Rice: In a bowl, mash avocado with lime juice, olive oil, and salt. Gently fold in warm cooked rice until creamy and evenly mixed.
  4. Assemble the Stack: Using a ring mold or ramekin, layer avocado rice at the bottom, then top with sliced chicken. Garnish with cilantro, lime zest, and chili flakes. Carefully remove mold and serve immediately.
