Ingredients
1 1/2 pounds (680g) flank steak or skirt steak 2 tablespoons olive oil 1 teaspoon ground cumin 1 teaspoon chili powder 1 teaspoon smoked paprika 1/2 teaspoon garlic powder Salt and pepper, to taste 4 large flour tortillas 1 cup (180g) cooked rice (white, brown, or cilantro lime) 1 cup (160g) cooked black beans or pinto beans 1/2 cup (60g) shredded cheddar or Monterey Jack cheese 1/4 cup (60ml) sour cream 1/4 cup (60ml) salsa or pico de gallo 1/4 cup (30g) chopped fresh cilantro (optional) 1/4 cup (30g) diced onions or scallions (optional)
Instructions
1. In a bowl, mix olive oil, cumin, chili powder, smoked paprika, garlic powder, salt, and pepper. Rub marinade onto steak and let rest at least 30 minutes (or overnight). 2. Heat skillet or grill over medium-high heat. Cook steak 4–5 minutes per side, or until desired doneness. Let rest 5 minutes before slicing thinly against the grain. 3. Warm beans, rice, and tortillas. Prepare toppings. 4. Lay a tortilla flat and layer rice, beans, steak, cheese, salsa, sour cream, and optional toppings. 5. Fold in sides, roll tightly, slice in half, and serve warm.
