  • 1 teaspoon fresh ginger, grated

  • Chicken, tofu, pork, or mushrooms

Vegetables & Toppings:

  • Bok choy
  • Mushrooms
  • Carrots
  • Soft-boiled eggs (optional)
  • Green onions
  • Nori (seaweed)
  • Sesame seeds

Instructions

  1. Soft-boil eggs (optional): Boil eggs for 6–7 minutes, transfer to ice water, peel, and set aside.
  2. Sauté aromatics: Heat sesame oil in a large pot over medium heat. Add garlic and ginger; sauté 1 minute until fragrant.
  3. Build broth: Add broth and soy sauce. Bring to a gentle boil, then reduce to a simmer.
  4. Add vegetables: Stir in bok choy, mushrooms, and carrots. Simmer until just tender.
  5. Cook noodles: Bring broth back to a boil and add ramen noodles. Cook 2–3 minutes until tender.
  6. Add protein: Stir in cooked chicken, tofu, or other protein to warm through.
  7. Assemble: Divide noodles and broth into bowls and top with eggs, green onions, nori, and sesame seeds.

Notes

  • Noodles: Fresh ramen noodles give the best chew, but dried ramen or egg noodles work well.
