Ingredients
For the Maple Pancakes:
- 1 cup (125g) all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 egg
- ¾ cup (180ml) buttermilk
- 2 tablespoons melted butter
- 2 tablespoons maple syrup
- ½ teaspoon vanilla extract
- Optional: 1 tablespoon maple crystals (for extra bursts of flavor)
For the Filling:
- 2 large eggs
- 2 slices cheddar cheese
- 2 cooked sausage patties or your preferred protein substitute
- Butter or oil (for cooking)
Optional Add-Ins:
- Spinach or sautéed mushrooms
- Tomato slices
- Plant-based sausage or eggs for a vegetarian version
Instructions
Step 1: Make the Pancake Batter
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk the egg, buttermilk, melted butter, vanilla, and maple syrup. Combine the wet and dry ingredients, stirring just until mixed. Let the batter rest while you prep the fillings.
Step 2: Cook the Fillings
Heat a skillet over medium heat. If using sausage patties or a plant-based option, cook until browned and heated through. Set aside. Crack the eggs into a greased skillet and cook as desired—sunny side up, over-easy, or scrambled. Top each with a slice of cheddar cheese so it melts slightly while still hot.
Step 3: Make the Maple Pancakes
Heat a griddle or nonstick skillet to medium-low. Lightly grease the surface. If using molds, place them on the pan and fill halfway with batter. Cook 2–3 minutes per side, flipping carefully once bubbles appear. You’ll need four pancakes total—two per sandwich.
Step 4: Assemble the McGriddles
Place one pancake on a plate, top with the cooked sausage, then the egg and cheese, and finish with the second pancake on top. Press gently to hold it together. Repeat for the second sandwich.
Step 5: Serve Warm
Serve your homemade McGriddle hot off the griddle, optionally with a drizzle of warm maple syrup on the side for dipping.

- Use ring molds for perfect, round pancakes that look like the real thing.
- Warm all components before assembling so nothing gets cold too quickly.
