Easy Homemade Buttery Soft Pretzels and Pretzel Bites

For the Dough:

  • 1½ cups warm water (about 110°F / 45°C)
  • 1 packet active dry yeast (2¼ tsp)
  • 1 tsp salt
  • 1 tbsp granulated sugar
  • 4 cups all-purpose flour
  • 2 tbsp unsalted butter, melted

For the Baking Soda Bath:

  • ½ cup baking soda
  • 9 cups water

For Topping:

  • 1 egg yolk + 1 tbsp water (egg wash)
  • Coarse salt for sprinkling
  • 2 tbsp unsalted butter, melted (for brushing after baking)

Optional Toppings:

  • Cinnamon sugar (½ cup sugar + 1 tbsp cinnamon)
  • Shredded cheddar cheese
  • Garlic powder + dried parsley

Instructions

Step 1: Prepare the Dough
In a large bowl, combine the warm water and yeast. Let sit for 5 minutes until frothy. Stir in the salt, sugar, and melted butter. Gradually add the flour, one cup at a time, stirring until the dough pulls away from the sides of the bowl. Knead by hand or using a dough hook for about 5 minutes until smooth and elastic.

Step 2: Let the Dough Rise
Transfer the dough to a greased bowl, cover it with a clean towel, and let it rise in a warm place for 1 hour or until doubled in size.

Step 3: Shape the Pretzels or Bites
Preheat your oven to 450°F (230°C). Turn the dough out onto a floured surface and divide it into 8 equal pieces. For large pretzels, roll each piece into a rope about 20 inches long, then form into a traditional pretzel shape. For pretzel bites, roll the dough into ropes and cut into 1-inch pieces.

Step 4: Give Them a Baking Soda Bath
In a large pot, bring the 9 cups of water and baking soda to a boil. Drop the shaped pretzels or bites into the boiling water for 30 seconds, then remove with a slotted spoon and place on a parchment-lined baking sheet.

Step 5: Add the Egg Wash and Bake
Brush each pretzel with egg wash and sprinkle with coarse salt (or leave plain for sweet versions). Bake for 12–14 minutes until golden brown.

Step 6: Brush With Butter and Serve
Remove from the oven and immediately brush with melted butter. Serve warm with your favorite dipping sauces or sweet toppings.

Notes

  • Use warm—not hot—water to activate your yeast correctly.
  • Don’t skip the baking soda bath—it gives pretzels their signature flavor and deep golden color.
