Ingredients
- 1 cup fresh or frozen blueberries
- ½ cup granulated sugar
- ½ cup water
- 1 tablespoon lemon juice (fresh is best)
- Chilled sparkling water or club soda, to serve
- Ice, for serving
- Optional garnishes: lemon slices, mint sprigs, extra blueberries
Instructions
In a small saucepan, combine the blueberries, sugar, water, and lemon juice. Stir to combine. Bring the mixture to a gentle boil over medium heat, then reduce to a simmer.
Cook for about 10–12 minutes, stirring occasionally, until the blueberries have burst and the mixture thickens slightly.
Place a fine mesh strainer over a bowl or jar. Pour the blueberry mixture through the strainer, pressing down on the solids with the back of a spoon to extract as much syrup as possible.
Discard or compost the leftover pulp, or save it to mix into yogurt or oatmeal.
Let the syrup cool to room temperature, then transfer it to a glass jar or airtight container. Refrigerate until ready to use. The syrup will thicken slightly as it cools.
To serve, fill a glass with ice. Add 2–3 tablespoons of blueberry syrup (more for a stronger flavor), then top with chilled sparkling water or club soda. Stir gently to combine.
Notes
- Use ripe, fresh blueberries for the most flavor. Frozen blueberries also work beautifully and are convenient year-round.
- Don’t skip the lemon juice – it adds brightness and keeps the syrup from tasting flat.
- Use cold sparkling water for the best fizz and refreshment.
