For the Pie Crust: 2 ½ cups (300g) all-purpose flour 1 tsp salt 1 tbsp sugar 1 cup (226g) unsalted butter, cold and cubed 6–8 tbsp ice water For the Apple Filling: 6–8 medium apples (about 2 ½ lbs), peeled, cored, and sliced ¾ cup (150g) brown sugar ¼ cup (50g) white sugar 1 tsp ground cinnamon ¼ tsp ground nutmeg 1 tbsp lemon juice 2 tbsp flour or cornstarch 1 tsp vanilla extract 1 tbsp butter, to dot the filling 1 egg + 1 tbsp milk (for egg wash)
Instructions
1. Prepare the Pie Crust: – In a large bowl, mix flour, salt, and sugar. – Cut in cold butter until mixture resembles coarse crumbs. – Add ice water gradually, mixing until dough forms. – Divide into two disks, wrap, and chill for at least 1 hour. 2. Make the Apple Filling: – Toss sliced apples with lemon juice, brown sugar, white sugar, cinnamon, nutmeg, flour, and vanilla. – Let sit for 10 minutes to release juices. 3. Assemble the Pie: – Roll out one dough disk and line a 9-inch pie dish. – Add apple filling and dot with butter. – Roll out second dough disk, place on top, trim and crimp edges. – Brush with egg wash and cut slits or create a lattice. 4. Bake: – Preheat oven to 425°F (220°C). – Bake for 20 minutes, reduce to 375°F (190°C), and bake 30–40 minutes more. – Cool on a wire rack for at least 2 hours before slicing.
