For High-Protein Bagel Bites:
- 1 ½ cups oat flour
- 2 teaspoons baking powder
- ½ cup protein powder (vanilla or unflavored works best)
- 2 large eggs
- ¾ cup plain Greek yogurt (or any yogurt of choice)
- 1 tablespoon olive oil or melted coconut oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon Everything But The Bagel Seasoning
- Salt and pepper to taste
Instructions
- Preheat and Prep: Preheat your oven to 375°F (190°C). Grease a muffin tin or mini muffin pan, or use parchment liners.
- Mix Dry Ingredients: In a large mixing bowl, combine oat flour, baking powder, and protein powder. Stir to combine.
- Add Wet Ingredients: Add the eggs, Greek yogurt, olive oil, garlic powder, onion powder, and salt. Mix until everything is well incorporated. The dough should be thick but easy to stir.
- Scoop and Bake: Spoon the batter into the muffin tin, filling each cup about ¾ full. Sprinkle Everything But The Bagel seasoning on top.
- Bake: Bake for 15-18 minutes, or until golden brown and a toothpick inserted comes out clean.
- Cool and Serve: Let the bagel bites cool for a few minutes before removing them from the pan. Serve warm or store for later use.
