For the dough (or use store-bought pizza dough):

  • 2¼ teaspoons active dry yeast
  • ¾ cup warm water (110°F)
  • 2 cups all-purpose flour
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 tablespoon olive oil

For the filling:

  • 2 cups cooked chicken breast, shredded or diced
  • 1 cup Alfredo sauce (store-bought or homemade)
  • 1½ cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste

For brushing:

  • 1 egg, beaten (for egg wash)
  • 1 tablespoon melted butter
  • 1 teaspoon minced garlic (optional)

Instructions

Step 1: Prepare the dough
In a bowl, dissolve yeast and sugar in warm water. Let sit for 5–10 minutes until foamy. Add flour, salt, and olive oil. Mix until a dough forms. Knead for 5–7 minutes until smooth. Cover and let rise for 1 hour, or until doubled in size.

(Or skip this step and use 1 lb store-bought pizza dough.)

Step 2: Preheat oven
Preheat your oven to 425°F (218°C). Line a baking sheet with parchment paper.

Step 3: Prepare the filling
In a large bowl, combine shredded cooked chicken, Alfredo sauce, mozzarella, Parmesan, garlic powder, Italian seasoning, and a pinch of salt and pepper. Mix until fully coated.

Step 4: Assemble the calzones
Divide dough into 4–6 equal portions. Roll each piece into a 6–8 inch circle. Spoon filling onto one side, leaving a ½-inch border. Fold dough over, press edges to seal, and crimp with a fork.

Step 5: Brush and bake
Place calzones on the baking sheet. Brush tops with egg wash. Bake for 15–20 minutes, or until golden brown. Remove from oven, brush with melted butter and minced garlic (optional), and let cool for 5 minutes before serving.

Notes

  • Don’t overfill – Too much filling can cause leaks and uneven baking.

  • Use pre-cooked chicken – Baked or grilled chicken breast works best.

  • Drain excess Alfredo sauce – If your sauce is too thin, reduce slightly on the stove first.

 

  • Seal well – Use a fork to crimp and prevent filling from spilling out.
