- 1 large egg
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon almond extract (optional)
- 1/2 cup seedless raspberry jam (or favorite jam)
- Powdered sugar, for dusting
Instructions
- Mix Dry Ingredients: Whisk together flour, baking powder, and salt in a medium bowl.
- Cream Butter and Sugar: Beat butter and sugar until light and fluffy, about 2–3 minutes.
- Add Egg and Flavoring: Mix in egg, vanilla extract, and almond extract until combined.
- Combine Dough: Gradually add dry ingredients to wet ingredients and mix until a dough forms.
- Chill Dough: Divide dough in half, flatten into discs, wrap, and chill for 1 hour.
- Roll and Cut: Preheat oven to 350°F (177°C). Roll dough to 1/8-inch thickness. Cut large hearts and remove centers from half using a smaller cutter.
- Bake: Bake on parchment-lined sheets for 9–11 minutes until lightly golden. Cool completely.
- Assemble: Dust top cookies with powdered sugar. Spread jam on bottom cookies and sandwich together.
