12 oz (340 g) flank steak or sirloin, thinly sliced 2 medium zucchinis, cut into half-moons 1 tablespoon vegetable oil 3 cloves garlic, minced 1 teaspoon fresh ginger, minced 3 tablespoons low-sodium soy sauce 1 tablespoon oyster sauce (optional) 1 tablespoon rice vinegar ½ teaspoon sesame oil ½ teaspoon red pepper flakes (optional) 1 teaspoon sesame seeds, for garnish 2 green onions, sliced, for garnish


Instructions

1. Thinly slice beef across the grain and cut zucchini into half-moon slices. Mince garlic and ginger and set aside. 2. Heat vegetable oil in a large skillet or wok over high heat. Sear beef strips for 1–2 minutes per side until browned. Remove to a plate. 3. In the same skillet, sauté garlic and ginger for 30 seconds, then add zucchini and cook for 3–4 minutes until just tender. 4. Return beef to the skillet. In a small bowl, whisk soy sauce, oyster sauce, rice vinegar, sesame oil, and red pepper flakes. Pour over beef and zucchini, toss to coat, and cook for 1–2 minutes more. 5. Garnish with sesame seeds and green onions before serving.
