Description

If you’re looking for the perfect blend of nostalgic comfort and homemade indulgence, these Handcrafted Oatmeal Cream Pies are just what you need.

Ingredients

Scale

For the Oatmeal Cookies:

  • 1 cup unsalted butter, softened
  • ¾ cup brown sugar (preferably dark brown for deeper flavor)
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract
  • 1 tablespoon molasses
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ teaspoons ground cinnamon
  • 3 cups old-fashioned rolled oats

For the Cream Filling:

  • ½ cup unsalted butter, softened
  • 1 ½ cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons heavy cream or milk (as needed for consistency)

Instructions

Step 1: Preheat and Prep
Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper.

Step 2: Cream Butter and Sugars
In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy. This usually takes about 2–3 minutes with a hand or stand mixer.

Step 3: Add Wet Ingredients
Mix in the eggs, vanilla extract, and molasses until fully combined.

Step 4: Combine Dry Ingredients
In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Slowly add the dry ingredients to the wet mixture. Mix just until combined.

Step 5: Fold in Oats
Stir in the rolled oats using a spatula. The dough will be thick and sticky.

Step 6: Scoop and Bake
Use a cookie scoop to portion dough onto prepared baking sheets, spacing them about 2 inches apart. Flatten each slightly with the back of a spoon or your fingers. Bake for 10–12 minutes or until edges are golden and centers are still soft.

Step 7: Cool Completely
Allow cookies to rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before filling.

Step 8: Prepare the Cream Filling
Beat the butter and powdered sugar together until fluffy. Add vanilla and 1 tablespoon of cream or milk. Beat until smooth. Add more cream as needed until the consistency is spreadable but firm.

Step 9: Assemble the Pies
Once cookies are completely cool, pipe or spread a generous amount of cream filling on the flat side of one cookie and sandwich with another. Gently press together.

Notes

Banana or maple flavor can be added to the filling for extra richness.
Cookies can be baked ahead and frozen for future use.
Match cookie sizes before assembling for cleaner presentation.
Add a pinch of cinnamon to the cream for a spiced version.
Let assembled cookies sit at room temperature for 10 minutes before serving for best texture.
