  • Salt and black pepper, to taste
  • Fresh parsley, chopped (optional for garnish)

Instructions

  1. Brown the Beef: Heat olive oil in a large pot over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess grease if needed.
  2. Add Aromatics: Stir in the chopped onion and cook for 3–4 minutes until translucent. Add garlic and cook for 30 seconds until fragrant.
  3. Add Vegetables: Toss in carrots, celery, and potatoes. Stir to combine with the beef mixture.
  4. Simmer the Stew: Pour in beef broth, diced tomatoes, tomato paste, Italian seasoning, paprika, salt, and pepper. Stir well and bring to a boil.
  5. Cook Until Tender: Reduce heat to low, cover, and simmer for 25–30 minutes or until vegetables are tender.
  6. Thicken if Desired: Remove lid and simmer an extra 5–10 minutes for a thicker texture. Taste and adjust seasoning as needed.
