Ingredients
For the brownie layer: 1/2 cup (115g) unsalted butter, melted 1 cup (200g) granulated sugar 2 large eggs 1/3 cup (40g) unsweetened cocoa powder 1/2 cup (60g) all-purpose flour 1/4 teaspoon salt 1/4 teaspoon baking powder For the cookie layer: 1/2 cup (115g) unsalted butter, softened 1/2 cup (100g) brown sugar 1/4 cup (50g) granulated sugar 1 large egg 1 teaspoon vanilla extract 1 1/4 cups (150g) all-purpose flour 1/2 teaspoon baking soda 1/4 teaspoon salt 1/2 cup (90g) chocolate chips Halloween sprinkles, candy eyeballs, orange and green food coloring (optional)
Instructions
Preheat oven to 350°F (175°C) and line an 8×8 or 9×9 inch baking pan with parchment paper. In a medium bowl, mix melted butter and sugar. Whisk in eggs, then cocoa powder. Add flour, salt, and baking powder. Mix until combined. Spread brownie batter evenly into pan. In another bowl, cream softened butter with brown and granulated sugar. Add egg and vanilla extract, mix well. Stir in flour, baking soda, and salt. Fold in chocolate chips and optional food coloring or sprinkles. Spoon cookie dough in dollops over brownie batter. Lightly press down with a spatula to spread. Don’t cover completely. Bake for 25–30 minutes, or until a toothpick comes out with moist crumbs. Let cool before slicing. Decorate with candy eyes or sprinkles if desired.
Notes
Use parchment paper for easy removal and cleanup. Don’t overbake—brookies should be soft and slightly gooey. Let cool completely before slicing for neat squares. Add Halloween-themed toppings for extra fun. You can prepare the batters ahead and refrigerate overnight.
