  • 2 tablespoons olive oil (or avocado oil)
  • 2 cloves garlic, minced

Seasoning:

  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon paprika
  • Salt and black pepper, to taste

Optional Garnish:

  • Fresh parsley or chopped green onions

Instructions

  1. Cook the sweet potatoes: Heat 1 tbsp oil in a large skillet over medium heat. Add diced sweet potatoes and a pinch of salt. Cover and cook for 10 minutes until tender. Remove and set aside.
  2. Sauté vegetables: In the same skillet, add remaining oil. Sauté onion and bell peppers for 3–4 minutes until soft.
  3. Brown beef and add garlic: Stir in garlic, then ground beef. Cook 5–7 minutes until browned and cooked through. Drain excess fat if needed.
  4. Season: Add thyme, oregano, paprika, salt, and pepper. Stir to coat everything evenly.
  5. Add zucchini: Stir in zucchini and cook 3–4 minutes until tender-crisp.
  6. Combine sweet potatoes: Return sweet potatoes to skillet. Stir gently and heat through for 2–3 minutes.
  7. Serve: Adjust seasoning, garnish with herbs, and serve hot.
