This Ground Beef Wellington is a simplified, budget-friendly twist on the classic dish. With seasoned ground beef wrapped in flaky puff pastry, it’s elegant enough for holidays yet easy enough for weeknights. - 1 lb (450g) ground beef (80/20 blend works best)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1 tsp dried thyme or fresh thyme leaves
- 1 tsp salt and 1/2 tsp black pepper
- 1 large egg (for beef mixture)
- 2 tbsp breadcrumbs
- 1 sheet puff pastry, thawed
- 1 egg yolk + 1 tbsp water (for egg wash)
- Optional: sautéed mushrooms, shredded cheese, spinach or kale
Instructions
- Prepare filling: Heat olive oil in a skillet. Sauté onion until soft, then add garlic. In a bowl, combine ground beef, sautéed onion/garlic, Worcestershire sauce, mustard, thyme, salt, pepper, breadcrumbs, and egg. Mix until combined.
- Shape mixture: Form beef mixture into a loaf shape.
- Wrap in pastry: Roll out puff pastry, place beef loaf in the center, fold and seal edges. Place seam-side down on a lined baking sheet.
- Brush & score: Brush pastry with egg wash. Score lightly with a knife for decoration.
- Bake: Preheat oven to 400°F (200°C). Bake for 25–30 minutes until golden and beef reaches 160°F (70°C).
- Rest & serve: Let rest 5 minutes before slicing. Serve with sides of choice.

- Thaw puff pastry in the fridge for best results.
- Keep pastry cold while working to prevent cracks.
