  • 1 cup chopped carrots
  • 1 cup chopped green beans (fresh or frozen)
  • 1 cup chopped celery
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder
  • 1 bay leaf
  • Optional: 1 cup spinach or kale
  • Optional: 1 teaspoon Italian seasoning

Instructions

  1. Brown the beef: In a large pot over medium-high heat, cook ground beef until browned. Drain excess grease.
  2. Add vegetables: Stir in onion, carrots, celery, and green beans. Cook 5–7 minutes until slightly softened.
  3. Add liquids & seasoning: Pour in diced tomatoes with juice and water. Add salt, pepper, garlic powder, and bay leaf. Stir well.
  4. Simmer: Bring to a boil, then reduce heat. Simmer for 30–40 minutes, stirring occasionally.
  5. Add greens: Stir in spinach or kale during the last 5 minutes if using.
  6. Finish & serve: Remove bay leaf. Adjust seasoning and serve hot with bread or salad.

  • Brown beef well before adding liquid for best flavor.
  • Don’t add leafy greens too early or they’ll overcook.
