Description

This creamy, savory Ground Beef Stroganoff is a budget-friendly twist on the classic Russian dish. Made with simple pantry staples and ready in about 30 minutes, it’s the perfect comfort food for busy weeknights. Serve over noodles, rice, or potatoes for a hearty meal everyone will love.

Ingredients

Scale

1 lb (450g) lean ground beef 1 tablespoon olive oil or butter 1 medium onion, finely diced 2 cloves garlic, minced 1/2 teaspoon paprika (optional) Salt and black pepper, to taste 8 oz (225g) mushrooms, sliced (optional) 2 tablespoons all-purpose flour 2 cups beef broth 1 cup sour cream 1 teaspoon Worcestershire sauce 12 oz (340g) egg noodles, cooked according to package directions 2 tablespoons fresh parsley, chopped (for garnish) Optional: Greek yogurt instead of sour cream Dijon mustard for tang Swap mushrooms for zucchini or spinach

Instructions

1. In a large skillet over medium heat, heat olive oil. Add ground beef and cook, breaking it up as it browns. Drain excess fat if needed. 2. Add diced onion and sauté until soft. Stir in garlic, paprika, salt, and pepper, cooking for 1 more minute. 3. Sprinkle flour over beef mixture and stir to coat evenly. Cook for 1 minute. 4. Gradually pour in beef broth while stirring to create a smooth sauce. Simmer for 5 minutes until slightly thickened. 5. Off the heat, stir in Worcestershire sauce and sour cream until creamy and smooth. 6. Serve sauce over warm egg noodles and garnish with chopped parsley.

Notes

• Stir in sour cream off the heat to prevent curdling. • Use lean ground beef to avoid excess grease. • For meal prep, make the sauce ahead and cook noodles fresh. • You can freeze just the sauce for up to 2 months and reheat before serving.
