1 tablespoon olive oil 1 medium yellow onion, diced 1 green bell pepper, diced 1 pound lean ground beef 2 cloves garlic, minced 1 can (15 oz) kidney beans, drained and rinsed 1 can (15 oz) pinto beans, drained and rinsed 1 can (15 oz) tomato sauce 1 can (14.5 oz) diced tomatoes, undrained 1 tablespoon chili powder 1 teaspoon cumin 1 teaspoon smoked paprika ½ teaspoon salt (adjust to taste) ¼ teaspoon black pepper 1 tablespoon brown sugar 2 cups beef broth 1 cup elbow macaroni (uncooked) Optional toppings: shredded cheddar, green onions, sour cream
Instructions
1. Heat olive oil in a large pot over medium heat. Sauté diced onion and bell pepper for 5–7 minutes until soft. 2. Add ground beef and cook until browned. Stir in garlic and cook for 1 minute more. 3. Stir in tomato sauce, diced tomatoes, kidney and pinto beans, chili powder, cumin, paprika, salt, pepper, and brown sugar. 4. Add beef broth and bring to a simmer. Cover partially and simmer for 15–20 minutes. 5. Add elbow macaroni and cook uncovered for 10–12 minutes until noodles are tender. 6. Serve hot with optional toppings like shredded cheese, green onions, or sour cream.
