Chicken & Protein:
- 1.5 lbs (680 g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- Bamboo or metal skewers (soak bamboo in water 30 minutes to prevent burning)
Thai Chicken Skewers Marinade:
- 1 cup (240 ml) canned full-fat coconut milk
- 3 tablespoons soy sauce
- 2 tablespoons freshly squeezed lime juice
- 2 tablespoons fish sauce
- 2 tablespoons brown sugar
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon red Thai curry paste
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1/2 teaspoon black pepper
Garnishes & Serving Ideas:
- Fresh cilantro, chopped
- Lime wedges
- Thinly sliced red chilies (optional)
- Jasmine rice or crispy smashed potato salad
Instructions
- Prepare the Marinade: In a large bowl, whisk together coconut milk, soy sauce, lime juice, fish sauce, brown sugar, garlic, ginger, red curry paste, coriander, turmeric, and pepper until smooth.
- Marinate the Chicken: Add chicken pieces to the bowl and toss to coat. Cover and refrigerate for at least 30 minutes or up to overnight.
- Thread & Grill the Skewers: Preheat grill to medium-high and oil grates lightly. Thread chicken onto skewers, leaving space between pieces. Grill for 10–12 minutes, turning occasionally, until chicken reaches 165°F (74°C).
- Serve & Garnish: Remove from grill, rest for a few minutes, then sprinkle with cilantro, garnish with lime wedges and chilies if desired, and serve with rice or salad.
Notes
- Use chicken thighs for juicier skewers.
- Don’t rush marination — more time equals more flavor.
- Keep grill at medium-high to prevent burning.
- Add bell peppers or pineapple to skewers for color and flavor.
- If no grill, use a broiler or grill pan indoors.
