Chicken & Protein:

  • 1.5 lbs (680 g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • Bamboo or metal skewers (soak bamboo in water 30 minutes to prevent burning)

Thai Chicken Skewers Marinade:

  • 1 cup (240 ml) canned full-fat coconut milk
  • 3 tablespoons soy sauce
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon red Thai curry paste
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1/2 teaspoon black pepper

Garnishes & Serving Ideas:

  • Fresh cilantro, chopped
  • Lime wedges
  • Thinly sliced red chilies (optional)
  • Jasmine rice or crispy smashed potato salad

Instructions

  1. Prepare the Marinade: In a large bowl, whisk together coconut milk, soy sauce, lime juice, fish sauce, brown sugar, garlic, ginger, red curry paste, coriander, turmeric, and pepper until smooth.
  2. Marinate the Chicken: Add chicken pieces to the bowl and toss to coat. Cover and refrigerate for at least 30 minutes or up to overnight.
  3. Thread & Grill the Skewers: Preheat grill to medium-high and oil grates lightly. Thread chicken onto skewers, leaving space between pieces. Grill for 10–12 minutes, turning occasionally, until chicken reaches 165°F (74°C).
  4. Serve & Garnish: Remove from grill, rest for a few minutes, then sprinkle with cilantro, garnish with lime wedges and chilies if desired, and serve with rice or salad.

  • Use chicken thighs for juicier skewers.
  • Don’t rush marination — more time equals more flavor.
