- 1 tablespoon honey (for sweetness)
- 1 tablespoon soy sauce
- 1 teaspoon dried oregano or fresh thyme
- 1/4 teaspoon red pepper flakes (optional, for heat)
For the Vegetables (Optional):
- 1 red onion, sliced into wedges
- 1 bell pepper, cut into chunks
- 1 zucchini, sliced into thick rounds
- 1 cherry tomatoes (optional)
Instructions
- Prepare the shrimp: Peel and devein the shrimp. Pat them dry with paper towels.
- Make the marinade: In a bowl, whisk together olive oil, lemon juice, garlic, honey, soy sauce, oregano, and red pepper flakes. Toss the shrimp in the marinade and let it sit for 15-30 minutes.
- Prepare the vegetables: Slice the vegetables and marinate them in olive oil, salt, and pepper (optional).
- Assemble the skewers: Thread the shrimp and vegetables onto skewers, alternating between shrimp, bell peppers, onions, zucchini, and tomatoes. Leave a little space between each item for even cooking.
- Preheat the grill: Preheat your grill to medium-high heat (about 400°F). If using a charcoal grill, ensure the coals are glowing red and covered with white ash.
- Grill the skewers: Place the skewers on the grill and cook for 2-3 minutes per side, until the shrimp are pink and opaque and the vegetables are tender.
- Serve and garnish: Remove the skewers from the grill and garnish with chopped parsley and fresh lemon juice before serving.
Notes
- Don’t overcook the shrimp: Shrimp cook very quickly and can become tough if overcooked. As soon as they turn pink and opaque, they’re done.
- Use skewers of the right size: Use 12-inch skewers for even grilling. Soak wooden skewers for 30 minutes before grilling to prevent them from burning.
- Grill in batches: If making a large batch, cook the skewers in batches to avoid overcrowding the grill.
