Instructions

  1. Prepare the shrimp: Peel and devein the shrimp. Pat them dry with paper towels.
  2. Make the marinade: In a bowl, whisk together olive oil, lemon juice, garlic, honey, soy sauce, oregano, and red pepper flakes. Toss the shrimp in the marinade and let it sit for 15-30 minutes.
  3. Prepare the vegetables: Slice the vegetables and marinate them in olive oil, salt, and pepper (optional).
  4. Assemble the skewers: Thread the shrimp and vegetables onto skewers, alternating between shrimp, bell peppers, onions, zucchini, and tomatoes. Leave a little space between each item for even cooking.
  5. Preheat the grill: Preheat your grill to medium-high heat (about 400°F). If using a charcoal grill, ensure the coals are glowing red and covered with white ash.
  6. Grill the skewers: Place the skewers on the grill and cook for 2-3 minutes per side, until the shrimp are pink and opaque and the vegetables are tender.

Notes

  • Don’t overcook the shrimp: Shrimp cook very quickly and can become tough if overcooked. As soon as they turn pink and opaque, they’re done.
  • Use skewers of the right size: Use 12-inch skewers for even grilling. Soak wooden skewers for 30 minutes before grilling to prevent them from burning.
