This Grilled Salsa Verde Pepper Jack Chicken recipe is everything you want in a dinner—quick, easy, cheesy, and bursting with smoky flavor.
Ingredients
- 4 boneless, skinless chicken breasts
 - 1½ cups salsa verde (jarred or homemade)
 - 4 slices pepper jack cheese (or about 1 cup shredded)
 - 1 tablespoon olive oil
 - Salt and black pepper, to taste
 - Optional garnish: chopped cilantro, lime wedges
 
Instructions
Step 1: Prep the chicken
Pound the chicken breasts to even thickness for faster, more even cooking. Pat dry and season both sides with salt and pepper.
Step 2: Preheat your grill or grill pan
Brush the grill grates or pan with olive oil. Preheat to medium-high (about 400°F).
Step 3: Grill the chicken
Place the chicken on the hot grill and cook for about 5–6 minutes per side, depending on thickness, until juices run clear and internal temperature reaches 165°F.
Step 4: Add salsa and cheese
In the final 2 minutes of cooking, top each chicken breast with 2–3 tablespoons of salsa verde and a slice of pepper jack cheese. Cover with grill lid (or tent with foil) to melt the cheese.
Step 5: Serve hot
Remove from the grill, garnish with fresh cilantro and a squeeze of lime if desired, and serve immediately.
Notes
- Slice rotisserie chicken breast, place in a baking dish, and layer with salsa verde and pepper jack cheese.
 - Broil for 2–3 minutes until the cheese is melted and bubbly.
